In Hong Kong during 1979, Madame Chong Kin Wo began making Chinese food that was quite exceptional. The Chinese dishes that she lovingly prepared were sold from a simple wooden cart that she pushed along the Wanchai pier. Her quest was to master the art of great Chinese cooking. By listening to her customers and learning more about her craft, Madame Chong constantly perfected her recipes, always seeking to attain higher standards, but never at the cost of her traditional principles.
